Espresso was only created in the 1950s and 1960s when steam power and the quality of metalwork enabled the pressure of one and a half atmospheres to force finely ground coffee through tiny holes that created an emulsion of coffee, oil and water. This emulsion is literally suspended in a colloid for a moment. If you let espresso sit, the oils will separate, and the crema - that fantastic golden gloss on top of your shot of coffee - will disappear.
Espresso is determined to have its presence felt. It's created under pressure, two worlds collide for an instant, and at that moment, a bold and pure taste emerges.
I recall Jesus in the Garden of Gethsemane. All of Heaven and Earth experiencing the build-up of pressure as Jesus makes his decision to submit to the cross. Two worlds were colliding in the most magnificent of sacrifices. Jesus is powerful and majestic. He is the Almighty One. He is the Great I Am.
And yet, for the joy set before him, he endured the unimaginable. For me, for you, for us.
